A carefully selected blend from the finest parcels of Pinot Noir, Pinot Meunier and Pinot Noir Précoce. Approximately 10% of the blend was fermented in old Burgundy barrels and partial malolatic fermentation took place to provide round and creamy structure. The wine aged on lees for five months in barrel and a further three years in bottle before disgorging with 38g/L dosage. Food Pairing Perfect as a sweeter sparkling wine and is ideal for enjoying with desserts or as a digestif. Tasting Notes Notes of brown sugar, ripe red fruit and pastry on the palate; it has a sweetness that compliments the classic English acidity to create a perfectly balanced wine.
