You will receive the Certificate of Ownership straight away and the bottle when it's ready. Est late 2018.
London Made Blanc de Noirs English Sparkling Wine
White sparkling wine made from two red grape varieties grown in England – Pinot Noir and Pinot Meunier.
Grapes were hand harvested and whole bunch pressed manually using a 100 litre wooden basket press. Juice went straight into ex-Burgundy Chardonnay french oak barrels for primary fermentation. The wine was regularly hand stirred to increase contact with the lees and improve complexity.
Wine underwent malolatic fermentation before being hand bottled to undergo secondary fermentation.
Bottles are currently undergoing secondary fermentation in the crypt of a well known London church.
We will age them until at least August 2018 but probably a little longer. We want the wine to be amazing. Great wine takes time. Read more here.
