Chateau Canon, located on the top of the Saint Emilion limestone plateau, in view of the village started out life as a part of the Clos St. Martin vineyard in the 1700's. In 1919. That year, Gabriel Supau bought Chateau Canon as a gift for his daughter and her husband Andre Fournier. In 2012, the chateau began an extensive renovation, which was completed in 2015.
An explosion of blackberry, melted tar, kirsch and dried violet petals on the nose; here, the Merlot is more expressive than the Cabernet Franc. The palate is medium-bodied with fine tannin, a voluminous Saint Emilion with an accentuated savoury element that fans out towards the long and persistent finish. It's here that the Cabernet Franc takes over and delivers that long, long finish.
Very complex food, which include red meat, tomato sauce spicy ingredients.
It's a lush hedonist's wine. We love the powerful style.
