Like all wines from Bodegas Canopy, this is also absolute Value for Money. The 2009 Kaos is produced with Garnacha grapes from two vineyards in Cebreros which is located on a slate bottom. The grapes are fermented in clusters with native yeasts in open 1500-liter barrels and then the wine is raised for 18 months in 500-liter oak barrels. The technique of clustering plots in a vineyard and then merging them into the right taste that the winemaker wants to obtain is a technique that is also used by Bodegas Pujanza , among others. Like all wines from Bodegas Canopy, these are completely organically grown and therefore produce no chemicals, fertilizers or the addition of sulphites.

The Canopy Kaos distinguishes itself from the other Garnachas mainly because the slate, dark fruit and earthy undertones of peat and graphite seem to be better integrated with the oak than usual. The taste is medium to full-bodied, with ripe tannins and again an earthy feel as well as a more pronounced mineral character. This is a very nice wine as we are enthusiastic about the entire range of Bodegas Canopy. Only 1467 bottles were made from the Kaos and the wine received no fewer than 92 points from Parker.
