The Chipra comes from the Valderiz winery, owned by Tomas Esteban, from the Spanish Ribera Del Duero wine region. Tomás collaborated with the famous winemaker Telmo Rodríguez and created this new ecological Valderiz. The Chiripa is the new wine from Bodegas Valderiz, the most personal wine from the Esteban brothers. The Chipra is made from Tempranillo (95%) and albillo (5%) from vineyards planted by Tomás Esteban between the ages of 20 and 30 years. The vineyards are ecologically certified. The grapes are pressed lightly and then fermentation takes place in stainless steel. The wine can then rest for 12 months, 30% of which in wood and others in concrete and amphoras.
The wine is nicely fresh with red fruit such as cherry and berry. In the mouth the wine has an attractive attack. Fresh, fruit with well-integrated a little oak but then very light. Nice and round and doesn't feel heavy despite the 14.5% alcohol. A very pleasant wine that we would like to drink just a little cooler (around 16 degrees).
Delicious wine with red pasta or a nice organic hamburger on the BBQ. Also a nice red terrace wine. Then drink slightly chilled.
