The Valpolicella Classico from Rubinelli Vajol comes from the typical grape varieties for amarone namely: 45% Corvina, 35% Corvinone, 15% Rondinella and 5% Molinara. The Grand Cru vineyards of Rubinelli are located in the Vajol area and are among the most beautiful in the Veneto. In the Vajol the winery has a unique position because all vineyards are located around the winery (this in contrast to many others (read most) that suddenly have throughout the area and the commercial amarone wineries often do not have their own vineyards and buy the majority of them on .

All grapes come exclusively from the fields around Corte Sant'Anna, this gives the wine a unique uniqueness and makes it unmistakable: wine born on tuff. This area was once the sea - imagine a sunny bay. The bottom consists of marl formed between the mesozoic era (150 million years ago) and the tertiary era (60 million years ago) followed by the origins of the Alpine mountains. The soil is very chalky, ideal for moderating the natural vigor of the vines. Limestone also has spongy properties: the capacity to retain water for long periods of time only to pass through when the plants need it. This always keeps the grapes well hydrated. The soil is thin but rich in organic substances, allowing the vines to live in perfect nutritional balance. This harmony is reflected in the quality of the wines that are always elegant and a complete expression, both in their aroma and in the mouth, of their rich polyphenolic abundance. Rubinelli Vajol wines are born in the ground before they reach the wine cellar; they are gifts from nature and from the formation of land structures in the Conca del Vajol.

The selected grapes are harvested manually at the end of September and immediately lightly bruised. The fermentation and maceration takes place for about 10-15 days at a controlled temperature and then remains in stainless steel for about 6-9 months to mature further. In the glass, the Valpolicella from Rubinelli is a light fresh ruby red color. In the nose the beautiful fresh fresh tones of red fruit, currants and pomegranate followed by (red) cherries and delicate hints of herbs. In the mouth, the wine is delicate, elegant, fragrant and extremely pleasant. We advise you not to drink this wine too hot, because the wine will lose its typical freshness. This is now an authentic Valpolicella which is made on the fruit. The harmonious bouquet, freshness and taste make this wine the perfect companion for pasta dishes, meats (charcuterie) and perfect at the start of your meal, from aperitif to first dish. This is also a perfect wine for a sunny day on the terrace. Slightly chilled with good company, this is an exceptionally well-made, pleasant wine.
