A quality cream sherry is hard to find but the Juan Piñero Cream Sherry shows how it's done and what a beauty of a dessert wine this is. The sherry is a blend of 75% Palomino Fino and 25% PX aged for 15 to 20 years. This Cream sherry from Bodega Juan Piñero is aged in American oak barrels by the "criadera & solera" system. It displays complex notes of toffee, maple syrup and honey-sweet caramel. In the glass it has a full thickness and an impeccable texture and an enormous freshness that can only be achieved with extremely long aging. The sherry is classically made and is certainly not too sweet and is therefore a great companion to a fruit sorbet or a chocolate mousse.
