ORIGIN: Baia al Vento represents the best selection of grapes our property located in the area of Bolgheri near the sea side. GRAPES: 90% Merlot, 5% Cabernet franc, 5% Petit verdot. VINIFICATION AND MATURATION: The grape harvest takes place in the first half of September for the Merlot and in the second half of the month for the Cabernet Franc and Petit Verdot. Maceration lasts approximately 30 days at a temperature of 28°C. Following to alcoholic fermentation, malolactic fermentation takes place in stainless steel tanks. The wine is then placed in new and one-year-old 500lt French oak tonneaux where it ages for approximately 16/18 months. Bottle ageing lasts a minimum of 6 months. SENSORY EVALUATION: Colour: deep ruby red with blueish hues. Bouquet of red berry fruits and Mediterranean flavours. Powerful and round with subtle and elegant tannins. Accompanies gamey food, stewed meat dishes and aged cheeses.
