Boccasanta has a pale-yellow colour, it is clear and quite solid, with white peel fruit and white flowers perfumes, the taste gently drifts to citrus notes. Enjoyed on its own or paired with white meats, pasta or fish dishes, the palate is rewarded with a long finish, highly characteristic of the vineyard. Each variety is collected in several steps and the grapes are vinified separately. The harvest is strictly manual in 15 kg boxes. Once transferred to the winery, the grapes are de-stemmed and kept for 48 hours at 5 ° C in a stainless steel tank then pressed in a soft way. The must obtained is poured into stainless steel tanks where the alcoholic fermentation takes place at a temperature of 15 ° C. In February, the three masses are combined for bottling.
Just 10 hectares of soils were analysed and selected by revered Oenologist Fabrizio Moltard to produce an exceptional marriage of Tuscan terroir with French varietals. As such, Monte Solaio vineyard delivers Super Tuscan IGT wines using Syrah, Cabernet Sauvignon, Merlot, Cabernet Franc, Viognier and indigenous varieties such as Pugnitello, Colorino, Vermentino and Ansonica.
No grapes enter or leave the winery. Each wine has been macerated, blended, aged, bottled and labelled by the same small team, under the careful eye of Head Vintner, Antonio Bonaguidi.
