El Gordo del Circo is born from old vineyards in Olmedo, in the province of Valladolid, where the Verdejo expresses all its character.
Nose with medium high intensity, with exuberant notes of grapefruit, ripe pineapple and lime. Subtle menthol and herbaceous hints. The palate is tasty, very round and fresh. The tropical sparkles and the aniseed touches mark the aftertaste of the wine. Harvest is during the first week of September in the early hours of the day. The grapes enter the winery at a very low temperature (around 10ºC). Once the grapes are received, maceration is carried out for 2-3 days followed by the press. For our Verdejo wine, we only use the first pressed juice called mosto yema .
Fermentation is in stainless steel tanks at a controlled temperature of 14ºC. Subsequent release of thick lees leaving only the fine lees for the process of aging (5 months minimum) with weekly batonages.

Greenish yellow color with golden highlights, clean and bright Nose
The nose presents us with a very high intensity, with the characteristic notes of the variety, notes of green fruits, apple, pear, accompanied by light tropical notes, such as pineapple, while having a background of freshly cut grass Palate
The palate is where wine is most surprising, for its great intensity and roundness while having a very well integrated acidity. In aftertaste we find the same notes that we have on the nose, even with a slight memory of pastry from the aging on fine lees Cellar & Appellation
