Vinification & Ageing
Vinification: Manual harvest, de-stemmed. Sent to a vibrating table then to the tanks on a conveyor belt. Maceration for 20 days, temperature control.Ageing: 18/24 months in barrels and 600 L 1/2 muids. Stabilised in the bottle for 3 months.
