Delicate, floral, a pleasing pale shade of salmon orange, and a million miles away from the watery Pinot Grigio the prevails the world over. Wild fermented, one-fifth in barrel. Seven months were spent on the lees, with 20 per cent in barrel for another half a year. The southern reaches of the Fleurieu peninsula, south of Adelaide, have a relatively cool, maritime climate, meaning freshness running all the way through this fascinating, thoughtful, yet ultimately thirst-quenching wine with its flavours of melon, peach, white flowers and hints of spice.
