Description

This is made from 100% Chardonnay from block 5, that in 2015 produced lovely aromas and a great balance of acidity to sugars. We barrel fermented this, allowing nature to gives us a helping hand with wild yeasts and then finished the job with our own.

After 9 months ageing in 3 year old French barrels with the occasional lees stirring, it was transferred to tank for malolactic fermentation and then bottled. Goes well with smoked salmon, seafood dishes, roast chicken or savoured on its own!
