Pedro ximenez (PX) wines from Jerez have increased in popularity over the last ten years. Romate are justly proud of their Pedro Ximenez Cardenal Cisneros wine, which was recently voted in the top 100 wines from Spain. PX wines are made with very ripe grapes that have been dried in the sun for up to 20 days. This concentrates the sugars and flavours within the grape as the water evaporates, and gives rise to a much richer must when the grapes are pressed. The weight of sugar means that the wine only achieves a partial fermentation and remains very sweet with a concentrated raisin flavour. Cardenal Cisneros is aged for more than 15 years in the solera system, which gives it a superior depth and greater length of flavour. Full of raisins and sultanas with just a touch of nuts, dried fruit and oaky spice. The flavour is big, rich with a luscious velvety feel. Very sweet but with balancing acidity, creamy raisins, espresso coffee and a touch of dark chocolate. New Packaging
