The 2007 is the greatest Robbione . Its’ dark Amarone-like body is packed with
black damson, sloe and loganberry fruit, tar, liquorice and grilled herbs, all
of which come together in an intense red of considerable character. Bloody hell,
that’s good.
Robbione is an appassimento wine (the grapes are dried, prior to fermentation)
made from Vernaccia Nera. In 2006 all the grapes were dried, from 2007 75% of
the grapes were dried, the result is somehow sharper with more targeted power,
certainly more poise.
Just 13,000 bottles are made from grapes taken from the best sites. The grapes
are picked at the back end of October and a high portion of the grapes are dried
for six weeks, fresh winds and mountain air makes this an ideal location for
this style of wine. The fermentation is at 25 ˚C and lasts 15 days, the wine is
then aged in 25hl ‘botti’ for 12 months and a further 9 months in bottle before
release.
