At the most south westerly point of the UK, husband and wife team Arthur and Hilary Miller established their Scilly Spirit Distillery on St Marys island, in the enchanting Isles of Scilly. The distillery opened its doors in May 2019, and impressively was receiving awards within weeks of releasing its Island Gin; the inspiration for which came from the local area and its history. The bottle shape is that of the lighthouse on Bishop's Rock, where in 1665 a spice trade ship carrying peppercorns was shipwrecked. Thus one of the main botanicals is pink pepper. The colour of the bottle beautifully resembles the colour of the water around the island, which is bright turquoise thanks to the pale sand below. Aromas of kaffir lime leaf, dried orange peel, fennel and pepper are present on the nose; while refreshing citrus notes of lime and orange are accompanied by a gentle warmth from the pepper corns on the palate. For the perfect serve, pour over ice and add 2 parts regular Indian tonic with dehydrated orange slices/dried orange peel and kaffir lime leaf to garnish.
