This wine comes from the palomino fino grape. reaching 15 of fortification, it is decanted into American oak casks with a capacity of approximately 500 litres, remaining in these butts known as sobretablas for at least six months until after a first classification it is considered ready to be incorporated into the ageing system of the Criaderas and Soleras of Manzanilla where the biological ageing of the wine takes place. Lightly salty and yeasty on the nose with a subtle hint of almonds. Initially dry on the palate with a light touch of oxidative flavours. The yeasty minerality continues through tinged with a touch of lemon and more lightly toasted salty almonds. Light, tangy and refreshing, perfectly clean on the finish. An excellent aperitif and a sublime match for seafood; at only 15% drink this just like winepour yourself a large glass, they do in Sanlcar!
