Named after another of Sting's songs, the latest addition to the Tenuta il Palagio cellar is When We Dance, a DOCG Chianti, made predominantly with Sangiovese, with small quantities of Canaiolo and Colorino. Having successfully produced very fine olive oil and honeys for a number of years, Il Palagio is now enjoying similar success with its wine.
