Bright and very intense red purple colour. The aromas are powerful, well developed and sophisticated with memories of tobacco, cassis, chocolate coating and cedar wood. It's mouthfeel is filled with perfume added with sensations of blackcurrants, plums, chocolate powder and fallen leaves, with a juicy depth and fresh concentration. Aged in new French oak, its the most international of the Ramón Bilbao wines: smooth, polished and complex, with lots of perfume, structure and toast and a smoky, savoury finish.A marvellous companion to vegetable and smoked flavours, such as those of wild mushrooms and truffles. Combines nicely with subtly spiced dishes and unsmoked, medium-cured soft cheeses.Everything in this wine is an art, from the way the grape clusters are chosen at the bodega's sorting table, to the fermentation in small french oak vats. After fermentation at controlled temperatures to achieve the highest extraction of aromas and colour, the wine is placed in casks where malolactic fermentation takes place without rackings, just the periodic stirring of the less using the battonage technique. It spends 24 months in new French radoux and cadus oak casks with a medium and medium plus toast level. The wine is bottled without being subjected to any fining or filtering.
