The Parotet is a milestone for this domain. A few years ago they started the restoration of 400-year-old amphoras that were located in their underground cellar. First they did tests with the vinification of white Spanish wine and the Parotet was their first red Spanish wine on amphoras. With great results: the Mando gives poor results on oak, but on amphoras, on the other hand, this is the ideal variety. This Spanish wine is therefore a return to the roots of this region: the assembly of Monastrell and Mando and the vinification on amphoras.
In an underground corridor, Pablo has a true treasure room with 100 underground amphoras about 400 years old. After a thorough restoration, these were put into use. Both maceration and fermentation take place on the amphoras. Then a further lagering so that the wine can develop nicely. The advantage is that no wood influence is noticeable. Revolutionary for the region.
Bright in color. In the nose pleasant notes of fine red fruit, typical garrigue and Mediterranean herbs. Magnificent, with a slender backbone and beautiful acids. Lots of matter intertwined in an elegant way. Perfect expression of the Mando.
