Even if the vineyard location, 95-year-old sticks and soil composition are exquisite, you still need an exceptional winemaker to turn that into a top wine. In this case, there are even two top winemakers who contribute their expertise. Olivier Merlin has been buying fruit of this Pouilly-Fuissé Premier Cru for a long time. When the château and its vineyard went on sale, he immediately called Dominique Lafon. A joint venture was born and with it a new white icon in Burgundy. The wine is a reference point for Pouilly-Fuissé, according to Burgundian expert Jasper Morris MW. Production is small. The monopole (a historically described vineyard of one owner) Clos des Quarts is a fraction larger at 2.25 hectares than the monopole Clos de la Barre in Meursault.

This is the first wine of Dominique and Olivier together, but based on the wine that Olivier already made. The vineyard is located in Chaintré, in the south of Pouilly Fuissé; easterly position, poor soil of calcareous clay with many pebbles, slight slope; Clos des Quarts is located on top of the hill and has a perfect exposition. The Clos des Quarts is a beautiful wine that comes from a beautiful terroir. The wine is delicious in his youth, but will only get better in the coming years. The wine is a 100% chardonnay, the oldest sticks of which date from 1917, only a small part of the vineyard - which is grown organically - has been replanted. The old sticks give low yields and very concentrated grapes, which yields a wine with a lot of richness, but also nice acids and a beautiful minerality.

The vinification takes place via a slow fermentation with natural yeast types, first and second fermentation in wooden barrels; the wine is aged for a year in partly new and partly used barrels of French oak. In the glass, the Clos des Quarts has a beautiful nose with yellow and white fruit, such as apple. Furthermore, a hint of fresh butter and an elegant touch with vanilla. Good volume in attack and complexity in the taste with an enormous length. The acids are well packed so that the wine also has a good storage potential. Delicious wine, a real must-have.
