The PSI is wine from the renowned winemaker Peter Sisseck which is also known for the cult wine Pingus and Flor de Pingus. The famous bodega Dominio de Pingus of Peter Sisseck in Ribera del Duero will give his wines considerably less wood. He who exaggerates suffers from winemakers laziness, he thinks.
The healthier the vineyard and the better the management, the less wood aging is necessary, is his view. In Brazil, the same vision was expressed during the visit of Wijnwijs.eu to one of the top wine boutiques. Sisseck previously noticed that new oak wood wine from a certain plot resulted in a reduction in the barrel. Immature tannins started to absorb oxygen. The bodega wants to avoid this in the future through drastically reduced use of wood. Less but much more expensive, because Dominio de Pingus now uses the T5 from Taransaud, which costs 1200 euros. Almost twice as expensive as the usual 225 liter barriques.
The wine has a deep fresh red color in the glass. The PSI is a robust wine with Tempranillo expression of the highest level: class, fruit, soft, sunny. A different structure than the other wines from this domain, in a less mature style. Sturdy and meaty attack with a lot of fruit that tends to be weighed down in the beginning. A wine that needs a lot of air in the beginning. Meaty finale with a nod to the authentic Ribera style of the time. Great glass of wine but anyway it is also from Sisseck.
