This beautiful deep red, almost black cherry red colored Primitivo del Salento igp 'Santufili' is made from 100% Primitivo grapes. In recent years, Primitivo has become one of the grapes of the Italian south, especially on the Adriatic side, in the Apulia region (also called Puglia). The Santufili is the classic wine based on the Primitivo grape. Primitivo is the local variety of California Zinfandel. A long fermentation on the skins of the ripe, sun-stewed grapes produces a very deep and intense wine. The Primitivo grapes come from ancient vineyards, a few kilometers from the Mediterranean Sea. The yields in these vineyards are very low, which explains the powerful and full character of the wines. After fermentation, the wine matures for about seven or eight months in wooden barrels. The result is broad, sultry, powerful and mouth-filling, bursting with fruit.
This is a muscular wine but with a good freshness and elegance. In the nose, the notes of dark ripe cherries and blackcurrants, currants, warm, vanilla, a sweet spiciness splash from the glass, but everything is beautifully balanced, beautifully rich and powerful, very sultry and intense. He built it up over the years together with his nephew (grandfather), Pietro Mocavero. He was responsible for the renewal of the vineyards and the adaptation of the cellar to modern technology. Pietro Mocavero has two sons, Francesco and Marco, who have gradually taken over his work since 1987. Francesco is in charge of the company, his brother Marco is responsible for the wine production. This means that the third generation of the family is currently responsible for the ins and outs of this family business in Monteroni di Lecce, in the heart of the Salerno region. A fine series of wines is made, which forms a union between the tradition of the region and the modern wine culture. The classic, well-known grapes of the region dominate the red wines and the rosé: Negroamaro, Montepulciano, Malvasia Nera and Primitivo.
