Bodegas Shayo was founded by Juan Gil. The Shaya Verdejo is a white wine from DO Rueda made from 100% Verdejo from old vines with very minimal yields, planted in the southeastern part of the province of Segovia - in the south of the Rueda appellation. The poor sandy soils force the roots of the old vines to search for water several meters deep. This gives the minerality extra thickness. The wine is made by Australian winemaker Belinda Thomson, from the Crawford River winery. The wine is raised partly on stainless steel and partly fermented in oak barrels and remains in contact with the wine for several months before being bottled.

The color is light yellow in the glass with beautiful youthful green reflections. Due to the partial aging in contact with own dregs and with the wood, the wine has a lot of fruit concentration and complexity (which is unusual for a wine in this price range). The wine has beautiful aromas that include nuts, white fruits and exotic fruits such as pineapple, and green apples. On the palate, the wine is medium-bodied and the Shaya offers a fresh, elegant and inviting wine with excellent acidity with clearly defined flavors.
