The greatest discovery of white Burgundy in the last decade is probably Pierre-Yves Colin. In 2001 Pierre-Yves started as a micro négociant in haute couture wines. At the time, he also worked for his father, the well-known and respectable winemaker Marc Colin from Saint-Aubin. But Pierre-Yves wanted to make even better wines and his father did not give him those options (according to Pierre Yves), which eventually resulted in a break and from 2005 Pierre-Yves was able to fully focus on his own company. The vast majority of the wine comes from its own grapes, and Colin also sources grapes from several fellow producers whom he knows well personally. The work in the vineyard and harvesting takes place under the guidance of Pierre Yves and his team, so that he has full control over the quality. His enormous drive, almost bordering on the obsessive, to make only the best possible.
The grapes come from our own vineyards and are picked entirely manually and selected with the utmost rigor. The wine is made in a very natural way, is not crossed, but very lightly filtered. Bâtonnage during vinification is not an issue. Pierre Yves believes this is manipulation of the wine, which matures for 14-18 months in used oak barrels of about 2-3 years old. The barrels are not toasted, but minimally burned to protect the wood.
The white Bourgogne Les Combottes from the Pernand Vergelesses AOP, like every Bourgogne from Pierre Yves Colin, has an unprecedented purity and are a true reflection of category and terroir. The Combottes has a cool, floral nose with an intense, creamy mouthfeel. Tones of caramel, light acidity with bitter. The finish is juicy and mineral.
