The winery Rubinelli Vajol is located in the heart of the Valpolicella region, close to the beautiful city of Verona. This house is known for its fine red wines. The winemaker was regularly asked to produce a nice white wine. This is quite successful with this fiori bianchi, which is produced on a small scale. This Rubinelli Fiori Bianchi is a blend of Garganega 80% and Trebbiano di Soave 20%. In other regions this would therefore be called a Soave, but with Rubinelli they opt for a name that reflects the typicity. Fiori bianchi stands for white flowers, which characterize the aromas of the wine. Beautiful straw yellow in the glass, dusty in the nose with a bit of grass, melon, white flowers. Fruity in the mouth with good acidity and a very pleasant bitterness in the aftertaste. At Rubinelli they have the time and they let the wine mature sur lie on its yeasts for a considerable period of time, so this is clearly more complex than many Soave and clearly 'more pleasant' in terms of price. The only problem is the very limited supply. Around 1000 bottles are made maximum and 75% of this remains in Italy and chances are that you will encounter this wine in the better restaurants of Verona or the restaurants located on Lake Garda. The wine is a delicious aperitif wine and is an excellent match with grilled turbot, frogs' legs and squid.
All grapes come exclusively from the fields around Corte Sant'Anna, this gives a special uniqueness to the wine and makes it unmistakable: wine born on tuff. This area was once the sea - imagine a sunny bay. The soil consists of marl formed between the Mesozoic era (150 million years ago) and the Tertiary era (60 million years ago) followed by the origin of the Alps mountains. The soil is very calcareous, ideal for moderating the natural vigor of the vines. Limestone also has spongy properties: the capacity to hold water for long periods of time, allowing it to pass through only when the plants need it. This always keeps the grapes well hydrated. The soil is thin but rich in organic matter which allows the vines to live in perfect nutritional balance. This harmony is reflected in the quality of the wines, which are always elegant and are a full expression, both in their aroma and in the mouth, of their rich polyphenolic multiplicity. Rubinelli Vajol wines are born in the ground before they reach the wine cellar; they are gifts of nature and of the formation of land structures in the Conca del Vajol.
