Domaine Weinbach, also known as Clos des Capucins, is not only one of the best domaines in Alsace, its refined and concentrated white wines are even considered to be among the best in the world. Grapes are picked by hand with very strict selection for perfect ripeness. The grapes from the Clos des Capucins and the Altenbourg vineyard are picked by hand, with very strict selection for perfect ripeness. In the vinification cellar, after an extremely slow and careful pressing of the grapes, a spontaneous alcoholic fermentation with wild yeasts takes place in old very large oak casks. The wines remain in this until at least June or July to gradually reduce the fermentation in order to maximize the expression of authenticity and complexity. In the glass, the De Weinbach Pinot Gris Clos des Capucins is clear pale straw yellow with a hint of green in the color. In the nose aromas of pear, apple, melon, honey and caramel. In the taste palette lychees, hazelnut, almonds, some residual sweetness and a hint of botrytis. An aftertaste that is fairly complex, with a nice acidity. The wine is a blend of Muscat d'Alsace and Muscat Ottonel. A beautiful wine with balance and intensity. Dry aftertaste. Only around 2,800 bottles are ever made.
This wine is certified organic & biodynamic (Demeter)
