Now a global brand and one of the major references from the Loire. Catherine & Pierre Breton cultivate and produce the wine in a bio-dynamic way (but not certified for bureocracy). The vines are on average 15 years old and the terroir is a pebble clay soil on a limestone plateau. The grapes are picked manually and soaked for 18 days at a low temperature so that the primary aromas are well preserved. Fermentation takes place without the addition of sulfur / sulphite.
This sparkling white wine is made from Chenin Blanc and is wonderfully dry with notes of white fruit with a hint of bitterness on the finish. On the palate the wine has volume, is very nicely balanced with a nice acidity. This organic brut is made according to the traditional method with a second fermentation in the bottle. The perlage in this sparkling wine is great and can compete with its much more expensive champagnes. Refined, very pleasant to drink and suitable as an aperitif or with a nice piece of grilled fish.
