As the oldest wine-producing region in the southern hemisphere, Constantia's uninterrupted history of wine-making extends over 300 years. The history of Constantia goes back to 1685, when Simon van der Stel named his property after the daughter of the benefactor who gave him a farm under a picturesque mountain range. The lush surroundings and temperate temperatures predicted well for agriculture and Van der Stel set to work with planting orchards and vineyards - of which our estate was a part. Constantia Uitsig is now one of a select number of wine domains that together form the Constantia Valley Wine Route. Constantia Uitsig has a long and rich cultural heritage. They are enormously committed to the greenest building and agricultural practices, with which they hope to create a space that is both beautiful and varied. As can be seen on their labels, they are working to become a refuge for not only native flora, but also for native birds.
The Constantia Uitsig Method Cap Classique Brut is only made from Chardonnay grapes, from a single vineyard that is almost three decades old. Yes, that vineyard gives such beautiful grapes, really beautiful to see. The clusters are gently squeezed and to obtain the cleanest juice that is possible. Fermentation occurs in 10% old oak barrels and in 90% stainless steel barrels. Malolactic fermentation is also carried out. The base wine is bottled with sugar and yeast to start the secondary bottle fermentation. After the aging, this Constantiauitsig method Cap Classique undergoes a 36-month ripening with yeast in the cellars
The Constantia Uitsig Method Cap Classique Brut has a beautiful perlage and has a beautiful light pale color as befits a blanc de blanc (100% chardonnay). In the nose we smell notes of almond, apple pie, pears and honey on the nose complemented by a hint of citrus and a little brioche / vanilla. On the palate a refined perlage, a sturdy pallet and lots of fruit nuances of apricots, pear, red apples and light wood tones. This is delicious as an aperitif and also delicious with fish, soft white cheese and with a dessert with fruit.
