In the heart of the Grand Cru area, the Vaudesirs valley is a textbook example
of the geology and history of the Chablis appellation. The vineyards are planted
with vines over 40 years old on south-facing steep slopes where the optimal
amount of sunshine is guaranteed. The Kimmeridgian clay in the soil comes into
play here, providing a wine with a pronounced minerality. These south-facing,
steeply elevated vines that are over forty years old sit in the most clay-rich
parts of this famous vineyard, and were the last of the domaine’s parcels to be
harvested (on 16th September), all of which ensures a balance of richness,
texture and mineral depth. Herbal and serious, with a note of bitter almond and
pear skin on the nose, the palate follows up with crunchy, green apple acidity,
which lifts and propels the palate to a long, toothsome finish.
"Some attractively toasty oak makes an appearance here, while the fruit is in
the yellow-grapefruit, lemon and peach-custard zone. The palate has a very rich
feel with so much flavor. The depth really is convincing, driving so long on the
