Dom Perignon, a 17th century benedictine monk, is one of the many historical figures who is claimed to have “invented” Champagne. Regardless of whether or not this is true it’s a lesser known fact that in his pursuits to make “the best wine” ever he actually considered the fizz resulting from accidental secondary fermentation to be a fault and spent a great deal of time trying ensure it did not occur within his wines.
Luckily for us he gave up on this pursuit meaning we can enjoy the iconic DP in all its effervescent glory.
