This seductive and haunting wine, which is arguably our favourite within the range, sees 39 months of lees ageing prior to  disgorgement to which it owes beguiling texture and finessed mousse.
To give that some context a standard bottle of Champagne, most likely adorned with a gaudy orange label, will have been aged on its less for 15 months as is required by law. Â So for an English Sparkling to receive an additional two years on top of that is a real sign of commitment from the producer and a testament to why England can now be considered a serious wine producing country.
Vibrant and vivacious in equal measure, with a perfume and flavour of bright, fresh summer fruits complemented by a character akin to freshly baked croissants on the finish. The wine is utterly irresistible now but if you’re particularly strong willed, or better yet have a bunker in a remote location, then it will reward careful cellaring.
