This seductive and haunting wine, which is arguably our favourite within the range, sees 39 months of lees ageing prior to Â disgorgement to which it owes beguiling texture and finessed mousse.
To give that some context a standard bottle of Champagne, most likely adorned with a gaudy orange label, will have been aged on its less for 15 months as is required by law. Â So for an English Sparkling to receive an additional two years on top of that is a real sign of commitment from the producer and a testament to why England can now be considered a serious wine producing country.
Vibrant and vivacious in equal measure, with a perfume and flavour of bright, fresh summer fruits complemented by a character akin to freshly baked croissants on the finish. The wine is utterly irresistible now but if you’re particularly strong willed, or better yet have a bunker in a remote location, then it will reward careful cellaring.
