Emil Bauer Sauvignon Blanc No Terrorist is a characterful and expressive,
single-varietal Sauvignon Blanc from the Palatinate, which bears the signature
of the renowned Emil Bauer & Soehne winery. The grapes thrive under ideal
conditions in the Palatinate, where the vines drive their roots deep into the
loam, limestone and loess soils.
At the time of optimum ripeness, the grapes are harvested particularly quickly
and during a cool time of day in order to preserve their intense aromas. After
careful hand-picking, the grapes are immediately taken to the winery, where they
are selected and carefully pressed. Fermentation then takes place in stainless
steel tanks at controlled temperatures to preserve the fresh fruit and aromatic
intensity. Once fermentation is complete, the wine matures for several months on
the fine lees, which gives it structure and fullness. Finally, it is bottled and
sealed with a screw cap.
