The Insoglio del Cinghiale Campo di Sasso Toscana IGT 2023 is a characterful red
wine that embodies a modern interpretation of Tuscan wine tradition. Produced at
the Campo di Sasso winery in Bibbona, near the Tuscan coast, this wine combines
international grape varieties with regional expression. The blend is based
primarily on Syrah, complemented by Merlot, Cabernet Sauvignon, Petit Verdot,
and Cabernet Franc – a stylistic composition that harmoniously combines power,
finesse, and Mediterranean spice.

The grapes are carefully selected using a vibrating conveyor belt, then
destemmed and gently pressed. Alcoholic fermentation and maceration take place
at a controlled temperature of up to 28°C over a period of 14 to 21 days, with
each grape variety being vinified separately to preserve its character. After
spontaneous malolactic fermentation, the batches are cuvetted and aged in
stainless steel tanks and wooden barrels for approximately seven months. Only
then does the wine undergo careful bottling—a process that impressively combines
craftsmanship and care.
