Opthimus rum, produced by the family-run company Oliver y Oliver from Cuba, is
made from molasses and matures for an average of 15 years using the solera
method. In this traditional process, which is also used for sherry, the rum
passes through different rows of barrels, with the distillate moving from the
upper, younger rows to the lower, older rows.

The quantity removed from the bottom row is always replaced with younger rum to
ensure continuous refinement. After this maturation phase, the rum is also aged
in former malt whisky barrels, which gives it additional complexity.



In addition to Opthimus, Oliver y Oliver also produces other renowned brands
such as Cubaney, Quorhum, Presidente Marti, Puntacana and Unhiq. The rums used
for blending come mainly from Panama and Trinidad and Tobago, which contributes
to the versatility and characteristic profile of their products.
