The Poli distillery was founded in 1898 by GioBatto Poli. Today, it is managed
by the four siblings Jacopo, Geampaolo, Barbara and Andrea Poli. It is located
in the north-eastern Italian municipality of Schiavon, in the province of
Veneto.
Sarpa is made from Merlot and Cabernet grapes. The distillation is done in
copper stills.
Cleopatra is made from Moscato Fior d'Arancio and Muscat grape marc. The
distillation process uses the "Crysopea" method.
The Sassicaia is made from Cabernet Franc and Cabernet Sauvignon grapes. The
distillation is done gently in small quantities with the help of steam. The
storage takes place for 6 months in former Sassicaia wine barrels.
