Saint James brand rums come from the renowned "Saint James" distillery in
Sainte-Marie on the Caribbean island of Martinique and are made from fresh sugar
cane juice, which is fermented in a complex fermentation process. A large
proportion of the sugar cane required for this is grown directly on the
company's own plantations, which ensures high quality and control over the
entire production process.

During fermentation, which lasts 24 to 36 hours, all the sugar is converted into
alcohol before distillation takes place. The result is a cane rum with an
impressive alcohol content of 75% vol. which initially rests for six months in
stainless steel tanks. This resting phase allows excess carbon dioxide and
unwanted off-flavors to escape, allowing the rum to gradually develop a
harmonious aroma and a pleasant taste.



This initial maturation is followed by at least two years of ageing in oak
barrels, which gives the Saint James rum its characteristic depth and mature,
woody notes. The result is a rum that impresses with its balance and aroma and
reflects the distillery's tradition of craftsmanship.
