Champagne Taittinger is a world-renowned champagne house that has been
family-owned since 1734. To this champagne house belong 260 hectares of
vineyards. The house is located in Saint-Nicaise in Rems, in the chalk cellar
the champagnes mature 18 meters under the earth. This cellar dates back to Roman
times.
The grapes are harvested by hand at optimum ripeness and pressed very carefully
in their entirety directly on site and then fermented in stainless steel tanks.
For four years, the rose champagne matures on the fine lees in the cool, deep,
dark chalk cellars. By regularly shaking and turning the bottle (until it is
finally upside down), the lees gradually slide into the neck of the bottle. Then
follows the degorgation to remove the yeast.
