Grapes get in the winery in 10 kg boxes (22 lbs). All bunches are reviesd on the selection table, by separating and rejecting the leaves and bunches that are not suitable, although all grapes are previously selected since only the bunches that are in perfect conditions of health and ripening are harvested. Grapes are destemmed and lightly pressed before transfering them to stainless steel deposits to ferment them at a low temperature
