Beautifully textured and refined, this vintage of Raimes Classic is a delight. Extended ageing on the lees has leant a gentle, baked bread note to the fresh apple fruit and crisp lemon acidity. A terrifically engaging aperitif from the very heart of HampshireGrapes are whole bunch pressed, a small proportion is fermeted in barrels adding texture and softness. After blending, secondary fermentation takes place in bottle with 32 months ageing on lees creating complexity and rich mouthfeel.This is a wine for fish or shellfish, perhaps seabass with caper and lemon sauce, pan fried hake or halibut. Or an asparagus risotto made with a splash of the wine.
