The Terroir
Geography: They are disbudded and cultivated in reasoned struggle. Depending on their situation, they are partly grassed, with tillage underfoot. The grapes are manual with a rigorous sorting of grapes.
Soils: Mica-schist.
Climate: Moderate continental with hot, dry summers.
The Vine
The vines are 25 years old of average age.
Vinification & Ageing
Vinification: The date is set after various analyzes and tastings in order to have the best aromatic and phenolic maturity. The target yield is here 50 hl / ha. Whole grapes are pressed sequentially to gently extract the juices. After static decanting, the fermentation lasts 3 to 4 weeks before aging on the lees for 6 months.
The Style
Nose: Its white Sancerre has a fresh and invigorating nose of pomelos and green currant.
Tasting Note: currant. The mouth combines density, freshness and elegance. The wine evolves on citrus fruits, with a rather vibrant crystalline side. Final tasty and complex.
