The Bacchus grapes for this wine come from a stunning vineyard near the town of Ledbury in Herefordshire, England. They are grown on a south facing hillside with views over the Malvern Hills. The lady who cares for the vines is a real character and she loves what she does.
We hand destemmed the grapes and foot crushed them to break up the skins and extract additional flavour. We used a variety of winemaking techniques to make a slightly different version of this classic British varietal. We fermented some on skins, as you would a red wine, some in French oak using naturally present yeasts and some in a stainless-steel tank. We then blended these before filtering and bottling. We think it smells like elderflower and green apples. The palate is pretty textural with hints of citrus fruit giving it zest.
