Next to neighbouring Champagne, this is Frances best appellation for the production of quality sparkling wine. All harvests are still being hand-picked and transported to the cellar in baskets that minimise crushing of the fruit. Made from Pinot Blanc and Auxerrois grapes and produced with the méthode traditionelle. It is characterised by a beautiful, frothy mousse and the classic toastiness resulting from the wine being left on the lees for a minimum of 9 months.
