The Cedar Ridge Distillery was opened by Jeff Quint and his wife Laurie in 2005. In 2009, Kolin Brighton joined to oversee the distillation process. Only local ingredients are used, such as the corn grown on the farm. The composition of 74% corn, 14% malted rye, 12% malted barley and aging in new oak barrels are just some of the key data of this Bourbon. What makes this bourbon whiskey special is the rather unusual method of maturing. By accelerating the maturing process, the 'Angel's Share' is much higher than usual. In the USA, the Angel's Share is usually 10 - 12%, but in Cedar Ridge Iowa Bourbon Whiskey it is about 18%.Tasting notes:Colour: Warm mahogany. Nose: Complex, subtle, freshly cut grass, caramel, grain. Taste: Dry, caramel, peppercorns, toasted cereals. Finish: Long lasting, well balanced, notes of spices. Best enjoyed pure at room temperature. By the way: A perfect accompaniment to Parma ham!
