The Xiaman Mezcal Artesanal is produced in the highlands of Oaxaca. For this, 8-year-old agaves are used, as well as the raw materials pinas, heart, espadin and tepextate agaves. The agaves are harvested by hand by the jimadores and steamed in earthen ovens. Crushing is then done with a donkey-powered millstone. The juice and agave fibers are distilled together.
