This Falanghina also shines in its very versatile pairing with Feta, Gouda. Vesevo, Beneventano Falanghina, come from Vesevo estate is situated in Campania in the Irpinian hills. Campania has become one of the most exciting wine producing areas Italy. The vineyards are planted 450 to 700 metres above sea level with constant cool breeze that blows off the Bay of Naples.The vines are both Guyot and spur pruned cordon systems trained, to maximise and further improve the sun exposure and simultaneously preventing disease alongside the perfect temperatures allow the growth of great quality grapes which flourished in the following dry, sunny and hot days alternating with cool nights. This enable the grapes to achieve a full ripeness.Antonio Melones great level of attention to detail is fundamental for producing wines with specific characteristics and to ensure the natural quality of the grapes are preserved.The grapes are carefully selected and undergo a gentle pressing to maintain the aromatic characters of Falanghina, the must was chilled immediately after pressing this help the must to settle its flavours and aromas. The wine is then fermented in a stainless steel tanks under controlled temperature between 12 14ºC . After the fermentation process, the wine was kept in stainless steel tanks constantly monitored to ensure the wine maintain its freshness fruit driven and complexity. The wine remained in stainless steel tanks until bottling. This wine was not oaked. Comprehensive monitoring and lees stirring takes place to enhance flavour and body to the wine. The wine underwent cold stabilisation and filtration before bottling.Tasting NoteLow temperature fermentation has retained the fresh, crisp and aromatic quality of the wine whilst still allowing its character to shine through. Perfumes of white flowers and white melon with mineral notes provide a backdrop to the full, ripe palate, and lift the finish. An elegant wine, with a llingering touch of honey.Food MatchingSeafood is Falanghinas best friend.
