Testament Babić is a red wine with a dark ruby, opaque colour.
Aromas of ripe red fruit, dark chocolate and Dalmatian spices enrich the scent.
The flavour is opulent with lively acids and a mighty structure. Best served at 16°C.
The Babić grapes are grown at Testament Winerys 47-hectare organic vineyard.
The manual harvest was made in the middle of September.
Fermentation with skin contact lasted 10 days. Spontaneous malolactic fermentation.
The wine is non-filtered.
Aged 6 months in used barrels of American and French oak to control oak influence.
Babić is a local Dalmatian red grape variety, originating from the UNESCO-protected Bucavac vineyard only 10 km from Testament Winery.
The Testament vineyard, planted 10 years ago, is located on hills sloping down towards the Adriatic Sea, providing a permanent breeze that is evident in the wines.
The vines grow in harsh conditions in limestone karst with less than 20% soil thus committing themselves to premium grapes.
