TASTING NOTESColour: intense ruby red with violet notes on the outline.Aroma: red mature notes, spicy with notes of ecalipt, figs and mentrol.Palate: intense and sweet entry due to the mature tannins and a good polyphenolic repeness. Medium high structure with balanced acidity and long final taste.Ageing potential: because of it's structure it is a wine that can be stored for 6 years.THE WINERYOur family’s love affair with the world of wine began in 1980, when our grandfather Roberto Romero built his first winery in Tolombón, a few kilometers from Cafayate. In the year 2000 we acquired an old Winery and updated it with modern tecnology to focus on the production of small lots of very high quality wines.We believe in Cafayate; its potential, its people, its history and its culture. We want to express in a new way Cafayate’s terroir.THE VINEYARDSCafayate is a small, remote valley located in the province of Salta in Northwest Argentina, with a desertic climate and vineyards planted between 1.676 and 2.499 meters elevation.The main influence on the vines is the wide day-night temperatura fluctuation caused by the altitude- warm days and cold nights, very Little rainfall and ample sunlight. (over 320 sunny days per year). The high altitude -26ºS- triggers budbreak 1.5 to 2 months earlier tan growing áreas in Mendoza at 33ºS, leading to long hang times. Growing conditions favor full ripening cycles and the concentrated fruit results in aromatic, flavorful whites and red wines with smooth and round tannins.The Sandy soils turn rocky on the hillsides, with excellent drainage, ideal for farming sustainably.
