Sébastiens village Chablis comes from several parcels some over 45 years old, fermented in stainless steel. Very impressive with crisp red apples, yeasty bready notes with a chalky backbone and nice citrus acidity.
Having worked with his father and brother at Domaine Danieil Dampt, Sébastien set out on his own in 2007. With 7 hectares of vines, a spanking new winery nestling amongst the vines of the two Premier crus of Vaillons and Côte de Léchet and a huge amount of dedication these wines are impressive.
The Village Chablis comes from several parcels some over 45 years old and is fermented and aged in stainless steel with 8-10 months on its lees. Very impressive with crisp red apples, yeasty bready notes with a chalky backbone and nice citrus acidity. Drinking beautifully but don’t forget good Chablis ages really well, not just 1er or Grand Cru, a year or two in the cellar really repays.
Style: crisp, dry, elegant
Maturity: drinking now but will age well too
