This wine organoleptically represents its origin in the cool desert of northern Chile. The nose is essentially mineral, revealing aromas of stones and chalk, together with austere, delicate notes of green cherimoya (or custard apple) and white stone fruits. The mouth is structured, linear and taut, providing great tension and persistence in the finish. This is a unique wine with great personality and character.

Technical
50% of the grapes were left as whole clusters. The grapes were pressed by foot. No products were added to the must. All of the must was fermented with ambient yeasts in stainless steel barrels.The wine was aged for 21 months in stainless steel barrels in order to retain the identity of the place the grapes come from: the Atacama Desert. The wine was manually bottled, with only 5,800 bottles being produced.

About the Vineyard
The Cincinelli Marco farm is located within the Chianti area, on the hills overlooking the city of Capolona, ​​a small town not far from Arezzo along the Strada Statale 71 which from Umbria goes up all the Casentino valleys to reach the Romagna. All the land of the company is located in the natural amphitheater guarded by the hamlets of Bibbiano, Botti and Cenina, at an altitude ranging from 200 to 350 meters. Our accommodation facility was also born in the small village of Botti, where anyone who wants to cheer up the spirit can do so by looking out the window and contemplating our vineyards.

Of the total area, the company cultivates 45 hectares of vineyards and 4 hectares of olive groves. Of the former, the variety that reigns supreme is certainly Sangiovese, given that thanks to the soils and the micro-climate present it best expresses its characteristics, but for will and passion the Company has also chosen to cultivate international vines such as Cabernet, Syrah and Merlot without forgetting the importance of keeping the genetic heritage of our region alive by cultivating Mammolo, Canaiolo and Foglia Tonda. Regarding the olive groves, following the excellent Tuscan style, the company cultivates the Frantoio, Leccino, Moraiolo, Pendolino varieties.

Although there are still some "historic" vineyards such as that of Botti, the company has tried over time to renew its older vineyards, often associated and not easy to manage, to improve both their structural characteristics, such as increasing the number of plants per hectare and use a structure capable of guaranteeing correct maturation, as well as the genetic characteristics by choosing the best clones in order to guarantee a high quality of the material to be transformed.

The company has always cultivated its land organically and tries to best guarantee the natural biodiversity present: for this reason the vineyards have been planted to guarantee the alternation of olive groves, woods and scrubs.
